Vinified according to the ancient practice of
the "Governo all' uso del Chianti",
a slow refermentation of the wine that has just
been racked off, with selected grapes that have
been slightly dried on trellises.

in the bottle .It is produced in the same way
as the Fiorile, but is matured in casks for "only"
5 years, and has a different type of grape - white
instead of red - and among these the now rare
Colombano.
